Matcha Cookies – Soft and delicious cookies with Matcha Power and white chocolate. They can easily be made vegan and gluten-free, making them perfect for fika or whenever you’re craving something sweet.
Time:
Approx. 55 minutes, including 30 minutes in the fridge
Ingredients:
140 g wheat flour or 150 g gluten-free flour
3 tbsp (24 g) cornstarch
1 ½ tsp baking powder
113 g butter of your choice
1 ⅓ dl granulated sugar
0.5 dl brown sugar
2 tbsp milk of your choice
4 tsp Matcha Power
White chocolate chips
Instructions:
Combine the flour, cornstarch and baking powder in a bowl.
Beat together the butter, granulated sugar and brown sugar. Add the milk and mix.
Stir the Matcha Power into the dry ingredients.
Gradually add the dry ingredients to the butter mixture and mix until you have a smooth dough.
Fold in the white chocolate chips.
Let the dough rest in the fridge for 30 minutes.
Shape the dough into balls and place them on a baking tray lined with baking paper.
Bake at 180°C for 12–13 minutes.
Allow to cool slightly and enjoy! 💚
